Cheese and chocolate pairings are being held in some of the foodier parts of New York City, but Rochester’s Hedonist Artisan Chocolates has taken this emerging trend a step further by using locally made cheese as an ingredient in their handmade chocolate truffles. These special chocolates are a sweetly savory treat to usher in the fall season.

Hedonist’s Goat Cheese Collection features five decadent semi-sweet chocolate truffles made with goat cheese (or chevre) from the Finger Lake’s own Lively Run Goat Dairy:

• Black Currant - Black currants and creme de cassis
• Chile Cinnamon - Ancho chile, cinnamon and raw sugar
• Honey Fig - Local honey and California figs
• Strawberry Balsamic - Strawberries and aged balsamic vinegar
• Thyme Pepper Pistachio - Thyme, black pepper, salt and pistachios

Hedonist chocolatier Jennifer Posey has been experimenting with goat cheese truffles since she started the company in 2007, but this year she put all her ideas into a cohesive collection. The taste of cheese is subtle and it enhances, but doesn’t overpower, the rich taste of chocolate in each truffle.
