What is Chevre?: An Introduction to Goat Cheese and its Role in Our Chocolate

Even if you do not parle le francais, you may know that chevre means goat cheese. Beyond the translation, though, many mysteries remain. The question that comes to mind as being the most frequently asked by customers is simply, “Goat cheese in chocolate?”. Oui!

Goat cheese is considered to be one of the first dairy products ever made, dating back thousands of years. There are several methods for making goat cheese, with the simplest being the process of letting the milk curdle and then drying the curds. It is also common to coagulate the milk using an acid, such as lemon juice or vinegar. Goat cheese is so often referred to as chevre because France is known for producing vast quantities of cheeses made from goat’s milk, largely thanks to their outstanding goat population.

So, what led us to creating chocolate containing chevre? First and foremost, we’re hedonists, and everything we create for Hedonist Artisan Chocolates comes from an overall strive to be unique in our pleasure pursuits. Texturally, goat cheese is a great agent in a ganache. Unlike other cheese that melt when exposed to heat, goat cheese simply softens, which makes for a delightfully creamy texture when enrobed in chocolate.

Another motivation for making chocolate with goat cheese is that it can be enjoyed more easily by those with dietary restrictions. Many people have an intolerance to cow dairy, which limits their options when it comes to choosing chocolate. Because goat milk is more similar to human milk than cow milk is, those with intolerances of cow’s milk are often able to safely eat goat cheese.
